Bio: Milanese Chef, Mirko Paderno—a James Beard nominee and Barilla Academy Master Chef—imparts his passion and time-honored culinary education to Four Seasons Hotel Los Angeles at Beverly Hills in his new position as Chef de Cuisine of Culina and Vinoteca—two regional Italian restaurants located on the luxurious property.
Formally trained at the Cesare Ritz School in Merano, Paderno’s love of pure flavors and delicate techniques has evolved during his twenty years in the culinary industry. He began his career at Four Seasons in Milan where he refined his skill and palate under Chef Sergio Mei who taught Paderno to respect the unique flavors, textures, and nuances of each individual ingredient. In 1999, Paderno relocated to Los Angeles to take lead of Piero Selvaggio's restaurant, Primi, as Executive Chef before further discovering the city’s diverse range of Italian cuisine in his positions at Valentino, Celestino Drago, and Officine BRERA. Padero also oversaw the opening of Cecconi's in West Hollywood and Oliverio at the Viceroy to widespread acclaim.
With a devout appreciation for classical cuisine with modern touches, Paderno aims to continue Culina and Vinoteca’s commitment to the regional Italian dishes enlivened by the abundance of fruits and vegetables grown locally in California.
