David Shim is the executive chef of Michelin-starred Cote, a modern Korean steakhouse in Manhattan’s Flatiron district. Born in Seoul, Korea, Shim was on track to become a professional soccer player, but it was a passion for the culinary arts that drew him to pursue a different path. Shim began his culinary career as a line cook at Gramercy Tavern. In 2008, he moved on to become chef tournant at Veritas and then master cook at L’atalier de Joel Robuchon at the Four Seasons Hotel, before accepting the position as Executive Chef of Kristabelli. After the restaurant’s closure in 2013, Shim took the position as sous chef at M. Wells Steakhouse until approached by Simon Kim to open Cote. At Cote, Shim’s menu marries the conviviality of Korean barbecue with the top-notch ingredients of the American steakhouse. Since opening last year, Cote has been awarded numerous accolades, including a two-starreview from The New York Times and a place among GQ's Best Restaurants in America.
